  • 4 large heirloom tomatoes, sliced
  • 2 medium beets, cooked and thinly sliced
  • 1 small red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh basil leaves, torn
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper, to taste

Instructions

  1. In a large serving dish, arrange the sliced heirloom tomatoes, cooked beet slices, and red onion slices.

  2. Sprinkle the crumbled feta cheese and torn basil leaves over the vegetables.

  3. Drizzle the balsamic vinegar and olive oil over the salad.

  4. Season with salt and pepper to taste.

  5. Gently toss the salad to combine all the ingredients.

  6. Serve immediately and enjoy!
