  • 2 cans (14 oz each) hearts of palm, drained and sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint
  • 1/4 cup lime juice
  • 2 tablespoons honey
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the hearts of palm, cherry tomatoes, red onion, cilantro, and mint.

  2. In a separate small bowl, whisk together the lime juice, honey, salt, and pepper until well combined.

  3. Pour the dressing over the salad and toss gently to coat.

  4. Serve immediately and enjoy!
