How To Make Healthy Shakshuka

Ingredients
- 2 tbsp olive oil
- 1 onion, diced
- 1 red bell pepper, diced
- 2 cloves of garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp chili powder
- 1 can (400g) crushed tomatoes
- Salt and pepper, to taste
- 4-6 large eggs
- Fresh parsley, for garnish
Instructions

Heat olive oil in a large skillet over medium heat. Add onion and bell pepper, sauté until softened.

Add garlic, cumin, paprika, and chili powder. Cook for 1-2 minutes until fragrant.

Pour in crushed tomatoes and season with salt and pepper. Simmer for 10-15 minutes, until the sauce thickens.

Create small wells in the sauce and crack an egg into each well. Cover the skillet and cook for 5-7 minutes, until the eggs are cooked to your liking.

Remove from heat and garnish with fresh parsley. Serve hot with crusty bread or pita.
