How To Make Grilled Vegetable Bloomer

Ingredients
- 1 large bloomer loaf
- 2 zucchinis, sliced lengthwise
- 2 red bell peppers, seeded and cut into quarters
- 1 red onion, sliced into rounds
- 1 eggplant, sliced into rounds
- 4 tbsp olive oil
- 2 tsp dried mixed herbs
- Salt and pepper to taste
- 4 tbsp pesto
- 4 slices of mozzarella cheese
- Handful of fresh basil leaves
Instructions

Preheat grill to medium heat.

Cut the bloomer loaf in half horizontally and then into 4 equal pieces.

In a large bowl, toss the zucchinis, bell peppers, red onion, and eggplant with olive oil, mixed herbs, salt, and pepper.

Place the vegetables on the grill and cook for about 5 minutes per side, or until lightly charred and tender.

While the vegetables are grilling, spread pesto on one side of each bloomer piece.

Once the vegetables are cooked, place them on the pesto-covered side of the bread.

Top each sandwich with a slice of mozzarella cheese and some fresh basil leaves.

Place the sandwiches back on the grill and cook for an additional 2-3 minutes, or until the cheese is melted and bubbly.

Remove from the grill and serve hot.
