Ingredients
- 2 large aubergines, sliced lengthwise
- 3 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp smoked paprika
- Salt, to taste
- Pepper, to taste
- 1 cup plain yogurt
- 1/4 cup chopped fresh mint
Instructions

Preheat a griddle pan or barbecue to medium-high heat.

Brush the sliced aubergines with olive oil on both sides.

In a small bowl, mix together the cumin, coriander, paprika, salt, and pepper.

Sprinkle the spice mixture over the aubergines.

Place the aubergine slices onto the griddle pan and cook for 4-5 minutes on each side, until grill marks appear and they are tender.

In a separate bowl, combine the yogurt and chopped mint.

Serve the griddled aubergines with a dollop of the yogurt and mint mixture on top.
