How To Make Griddled Aubergines with Yogurt & Mint

Serves:

Ingredients

  • 2 large aubergines, sliced lengthwise
  • 3 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp smoked paprika
  • Salt, to taste
  • Pepper, to taste
  • 1 cup plain yogurt
  • 1/4 cup chopped fresh mint

Instructions

  1. Preheat a griddle pan or barbecue to medium-high heat.

  2. Brush the sliced aubergines with olive oil on both sides.

  3. In a small bowl, mix together the cumin, coriander, paprika, salt, and pepper.

  4. Sprinkle the spice mixture over the aubergines.

  5. Place the aubergine slices onto the griddle pan and cook for 4-5 minutes on each side, until grill marks appear and they are tender.

  6. In a separate bowl, combine the yogurt and chopped mint.

  7. Serve the griddled aubergines with a dollop of the yogurt and mint mixture on top.
