How To Make Green Shakshuka

Who says vegetarians don’t get to enjoy savory meals? A taste of these authentic vegetarian recipes will make you change your mind. So, you just might want to go vegetarian after your first bite.

Serves:

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 green bell pepper, diced
  • 1 jalapeno pepper, seeds removed and minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can (400g) diced tomatoes
  • 4 cups fresh baby spinach
  • 1 cup fresh parsley, chopped
  • 1 cup fresh cilantro, chopped
  • 4 large eggs
  • Crumbled feta cheese, for topping (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onion, garlic, green bell pepper, and jalapeno pepper. Cook until onion is translucent.

  2. Stir in cumin, paprika, salt, and black pepper. Cook for another 2 minutes.

  3. Add diced tomatoes and simmer for 10 minutes, until the sauce thickens slightly.

  4. Stir in the fresh spinach, parsley, and cilantro. Cook until the spinach wilts.

  5. Make four wells in the sauce and cracked an egg into each well. Cover the skillet and cook for 5-7 minutes, until the eggs are cooked to your liking.

  6. Serve the shakshuka hot, topped with crumbled feta cheese if desired.
