  • 4 large golden potatoes, peeled and diced
  • 2 medium onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried rosemary

Instructions

  1. Preheat oven to 400°F (200°C).

  2. In a large mixing bowl, toss the diced potatoes, sliced onions, olive oil, salt, black pepper, garlic powder, and dried rosemary until well coated.

  3. Spread the potato and onion mixture onto a baking sheet in a single layer.

  4. Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy, and the onions are caramelized, stirring halfway through cooking.

  5. Remove from the oven and let cool for a few minutes before serving.
