- 2 medium onions, thinly sliced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried rosemary

Preheat oven to 400°F (200°C).

In a large mixing bowl, toss the diced potatoes, sliced onions, olive oil, salt, black pepper, garlic powder, and dried rosemary until well coated.

Spread the potato and onion mixture onto a baking sheet in a single layer.

Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy, and the onions are caramelized, stirring halfway through cooking.
