Ingredients
- 1 cup couscous
- 1 cup vegetable broth
- 2 ripe peaches, sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh mint
- 1/4 cup chopped fresh basil
- 2 tablespoons extra virgin olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions

In a medium saucepan, bring the vegetable broth to a boil. Remove from heat and add the couscous. Cover and let sit for 5 minutes, then fluff with a fork.

In a large bowl, combine the cooked couscous, sliced peaches, crumbled feta cheese, chopped mint, and chopped basil.

In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour over the couscous mixture and toss gently to combine.

Serve the feta and peach couscous salad chilled or at room temperature.
