Ingredients
- 1 fennel bulb, sliced thinly
- 1 lemon, sliced
- 1 pint cherry tomatoes
- 2 tbsp olive oil
- Salt and pepper to taste
- 1/4 cup fresh basil leaves
Instructions

Preheat the oven to 400°F (200°C).

Place the fennel, lemon slices, and cherry tomatoes on a baking sheet.

Drizzle with olive oil and season with salt and pepper.

Roast in the oven for 15-20 minutes, until the fennel is tender and the tomatoes are blistered.

Remove from the oven and let it cool slightly.

Transfer to a serving dish and garnish with fresh basil leaves.

Serve warm or at room temperature.
