How To Make Egg-fried cauliflower rice with prawn cracker crumbs

Ingredients
- 1 head of cauliflower
- 2 tbsp vegetable oil
- 1 cup of frozen peas and carrots
- 1 cup of cooked shrimp
- 2 cloves garlic, minced
- 3 tbsp soy sauce
- 2 eggs, beaten
- 1 cup prawn crackers, crushed
Instructions

Cut the cauliflower into florets and pulse in a food processor until it resembles rice.

Heat 1 tbsp of vegetable oil in a large pan or wok over medium heat. Add the cauliflower rice and cook for 5 minutes, until slightly softened.

Push the cauliflower rice to one side of the pan and add another tbsp of vegetable oil. Add the garlic and cook for 1 minute, until fragrant.

Push the garlic to one side and pour the beaten eggs into the empty space. Scramble the eggs and then mix them into the cauliflower rice.

Add the frozen peas and carrots, cooked shrimp, and soy sauce to the pan. Stir well to combine everything.

Cook for another 5 minutes, until the peas and carrots are heated through.

In a separate pan, heat a little vegetable oil over medium heat. Add the crushed prawn crackers and cook for 2-3 minutes, until crispy.

Serve the egg-fried cauliflower rice topped with the crispy prawn cracker crumbs.
