How To Make Easy Vegetarian Chilli

Ingredients
- 2 tbsp olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 jalapeno pepper, seeded and minced
- 1 tbsp chilli powder
- 1 tsp cumin
- 1 tsp paprika
- 1 can (14 oz) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 cup vegetable broth
- Salt and pepper, to taste
Instructions

In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic. Cook until onion is translucent, about 5 minutes.

Add diced red bell pepper, diced green bell pepper, and minced jalapeno pepper to the pot. Cook for an additional 5 minutes, until vegetables are tender.

Stir in chilli powder, cumin, and paprika. Cook for 1 minute to toast the spices.

Add diced tomatoes, kidney beans, black beans, corn, and vegetable broth to the pot. Season with salt and pepper to taste. Bring to a simmer and let cook for 20 minutes, stirring occasionally.

Serve hot, garnished with desired toppings such as shredded cheese, sour cream, and chopped cilantro.
