Ingredients
- 2 tbsp vegetable oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 tbsp curry powder
- 1 tsp cumin powder
- 1 tsp turmeric powder
- 1 tsp ginger, grated
- 2 carrots, peeled and chopped
- 1 bell pepper, diced
- 1 zucchini, chopped
- 1 cup cauliflower florets
- 1 can (400 ml) coconut milk
- 1 cup vegetable broth
- Salt, to taste
- Pepper, to taste
- Fresh cilantro, for garnish
Instructions

Heat vegetable oil in a large skillet over medium heat. Add the diced onion and minced garlic. Cook until the onion is translucent and fragrant.

Add the curry powder, cumin powder, turmeric powder, and grated ginger to the skillet. Stir well to combine with the onions and garlic.

Add the chopped carrots, bell pepper, zucchini, and cauliflower florets to the skillet. Cook for about 5 minutes, until the vegetables are slightly softened.

Pour in the coconut milk and vegetable broth. Season with salt and pepper. Stir everything together and bring the mixture to a simmer. Reduce the heat to low, cover the skillet, and let it cook for about 15 minutes, until the vegetables are tender.

Serve the vegetable curry over steamed rice or with naan bread. Garnish with fresh cilantro.
