Ingredients
- 1 cup of black lentils
- 2 cups of water
- 1 tbsp of vegetable oil
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 tbsp of ginger, grated
- 1 tsp of cumin powder
- 1 tsp of coriander powder
- 1/2 tsp of turmeric powder
- 1/2 tsp of chili powder
- Salt, to taste
- 1 cup of canned diced tomatoes
- 1 cup of coconut milk
- Fresh cilantro, for garnish
Instructions

In a large pot, add the black lentils and water. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the lentils are tender.

In a separate pan, heat the vegetable oil over medium heat. Add the diced onion and cook until translucent.

Add the minced garlic and grated ginger to the pan, and cook for an additional 1-2 minutes.

Add the cumin powder, coriander powder, turmeric powder, chili powder, and salt to the pan. Stir well to coat the onions, garlic, and ginger with the spices.

Add the canned diced tomatoes to the pan and cook for 2-3 minutes, until heated through.

Transfer the cooked lentils to the pan and stir to combine with the onion and tomato mixture.

Pour in the coconut milk and simmer for an additional 5 minutes, until the flavors have melded together.

Serve the cheat’s black dhal hot, garnished with fresh cilantro.
