How To Make Curried Chickpeas

Ingredients
- 2 cans of chickpeas, drained and rinsed
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 inch ginger, grated
- 2 tomatoes, chopped
- 2 tablespoons of curry powder
- 1 teaspoon of cumin powder
- 1 teaspoon of turmeric powder
- 1 teaspoon of paprika
- 1/2 teaspoon of cayenne pepper
- 1 cup of vegetable broth
- Salt, to taste
- Fresh cilantro, for garnish
- Cooked rice or naan bread, for serving
Instructions

Heat oil in a large pan over medium heat. Add the chopped onions and cook until they become translucent.

Add minced garlic and grated ginger to the pan and cook for another minute.

Add the chopped tomatoes, curry powder, cumin powder, turmeric powder, paprika, and cayenne pepper. Cook for a few minutes until the tomatoes become soft.

Add the drained chickpeas and vegetable broth to the pan. Stir well and bring to a simmer. Cook for about 20 minutes, allowing the flavors to meld together.

Season with salt to taste. If desired, you can also adjust the spice level by adding more curry powder or cayenne pepper.

Serve the curried chickpeas over a bed of cooked rice or with warm naan bread. Garnish with fresh cilantro.
