Ingredients
- 4 cups mixed salad greens
- 1 cucumber, sliced
- 1 bell pepper, thinly sliced
- 1 carrot, grated
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup sunflower seeds
- 1/4 cup pumpkin seeds
- 2 tablespoons chia seeds
- 1/4 cup olive oil
- Juice of 1 lemon
- 2 tablespoons apple cider vinegar
- 1 teaspoon honey
- Salt and pepper to taste
Instructions

In a large bowl, combine the salad greens, cucumber, bell pepper, carrot, cherry tomatoes, red onion, parsley, sunflower seeds, pumpkin seeds, and chia seeds.

In a small bowl, whisk together the olive oil, lemon juice, apple cider vinegar, honey, salt, and pepper.
