- 1.5 lbs baby potatoes
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper to taste
- Fresh herbs (optional, for garnish)
Instructions

Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.

Place the baby potatoes in a large pot of salted water and bring to a boil. Cook for about 15 minutes, or until the potatoes are fork-tender.

Drain the potatoes and let them cool slightly. Place them on the prepared baking sheet.

Use the bottom of a glass or a fork to gently flatten each potato until it is about 1/2 inch thick.

Drizzle the olive oil over the potatoes and sprinkle them with garlic powder, paprika, salt, and pepper.

Roast the potatoes in the preheated oven for 25-30 minutes, or until they are golden and crispy.

Remove from the oven and garnish with fresh herbs, if desired.
