- 4 large potatoes, peeled and cut into chunks
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
Instructions

Preheat the oven to 200°C (400°F).

In a large pot, boil the potato chunks for 5 minutes. Drain and let them cool slightly.

Toss the partially cooked potatoes with olive oil, salt, and black pepper in a roasting tray.

Roast in the preheated oven for 45 minutes to 1 hour, or until golden and crispy, flipping them halfway through.
