How To Make Crispy Filo Tart with Seasonal Veg

Ingredients
- 6 sheets of filo pastry
- 2 tablespoons of olive oil
- 1 red pepper, sliced
- 1 zucchini, thinly sliced
- 1 small onion, thinly sliced
- 100g cherry tomatoes, halved
- 50g feta cheese, crumbled
- Salt and pepper, to taste
Instructions

Preheat the oven to 180°C (350°F).

Lay one sheet of filo pastry on a baking tray. Brush with olive oil. Repeat with the remaining sheets.

In a pan, heat the olive oil. Add the onion and cook until softened. Add the red pepper and zucchini and cook for 5 minutes. Season with salt and pepper.

Arrange the cooked vegetables on top of the filo pastry. Top with cherry tomatoes and crumbled feta cheese.

Bake in the oven for 20 minutes, or until the filo pastry is crispy and golden.
