- 4 large potatoes, peeled and cubed
- 4 cloves of garlic, minced
- 2 tbsp fresh thyme leaves
- 3 tbsp olive oil
- Salt and pepper to taste

Preheat the oven to 425°F (220°C).

In a large bowl, combine the cubed potatoes, minced garlic, thyme, olive oil, salt, and pepper. Toss until the potatoes are well coated.

Spread the potatoes in a single layer on a baking sheet.

Roast in the preheated oven for 30-40 minutes, or until the potatoes are crispy and golden brown, flipping them halfway through.

Remove from the oven and let the roasties cool for a few minutes before serving.
