Ingredients
- 8 slices of prosciutto
- 2 cups of frozen peas, thawed
- 1 cup of fresh mozzarella, diced
- 1/4 cup of fresh mint leaves, chopped
- 1/4 cup of extra-virgin olive oil
- 2 tablespoons of white wine vinegar
- Salt and pepper to taste
Instructions

Preheat the oven to 400°F (200°C). Place the prosciutto slices on a baking sheet lined with parchment paper. Bake for 10 minutes or until crispy. Remove from the oven and let cool.

In a large bowl, combine the peas, mozzarella, and mint leaves.

In a separate bowl, whisk together the olive oil, white wine vinegar, salt, and pepper to make the mint vinaigrette.

Crumble the crispy prosciutto into small pieces and add it to the pea and mozzarella mixture.

Drizzle the mint vinaigrette over the salad and toss gently to combine.
