Ingredients
- 1 cup red lentils
- 1 onion, finely chopped
- 3 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 1 tsp cumin
- 1 tsp turmeric
- 1 tsp garam masala
- 1/2 tsp chili powder
- 2 cups vegetable broth
- 1 cup coconut milk
- Salt, to taste
- Fresh cilantro, for garnish
- Basmati rice or naan, for serving
Instructions

Rinse the red lentils under cold water until the water runs clear.

In a large pot, heat some oil over medium heat and sauté the onion, garlic, and ginger until softened.

Add the cumin, turmeric, garam masala, and chili powder to the pot and cook for a minute until fragrant.

Add the red lentils, vegetable broth, and coconut milk to the pot. Bring to a boil, then reduce heat to low and simmer for about 30 minutes or until the lentils are cooked and creamy.

Season with salt according to taste.

Serve the creamy spiced dhal over basmati rice or with naan bread. Garnish with fresh cilantro.
