Ingredients
- 1 cup of dried lentils, rinsed
- 2 cups of vegetable broth
- 1 cup of cranberries
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 tsp of dried thyme
- 1/2 tsp of salt
- 1/4 tsp of black pepper
- 1/4 cup of chopped parsley
- 1/4 cup of grated Parmesan cheese
Instructions

Preheat the oven to 375°F (190°C).

In a large pot, combine the lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.

In a separate pan, sauté the onion and garlic until softened.

Add the cranberries, thyme, salt, and black pepper to the pan and cook for an additional 5 minutes.

Add the cooked lentils to the cranberry mixture and stir well to combine.

Transfer the mixture to a baking dish and sprinkle with chopped parsley and Parmesan cheese.

Bake in the preheated oven for 25 minutes, or until the top is golden and crispy.
