Ingredients
- 2 medium courgettes, grated
- 4 eggs
- 1/4 cup flour
- 1/4 cup grated Parmesan cheese
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup pesto
- 1 cup fresh rocket leaves
Instructions

Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.

In a large bowl, combine the grated courgettes, eggs, flour, Parmesan cheese, salt, and black pepper. Mix well until combined.

Pour the mixture onto the prepared baking sheet and spread it out evenly into a rectangle shape.

Bake in the preheated oven for 20 minutes or until the edges are golden brown and the tortilla is set.

Remove from the oven and let it cool slightly. Cut into wedges.

Top each wedge with a dollop of pesto and a few fresh rocket leaves. Serve and enjoy!
