How To Make Courgette & Tomato Soup

Ingredients
- 2 courgettes, diced
- 4 tomatoes, diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 tbsp olive oil
- 4 cups vegetable broth
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions

Heat the olive oil in a large soup pot over medium heat.

Add the onion and garlic, and cook until softened.

Add the courgettes and tomatoes, and cook for 5 minutes.

Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes.

Use an immersion blender to puree the soup until smooth. Alternatively, transfer the mixture to a blender and blend until smooth.

Season with salt and pepper to taste.

Serve hot, garnished with fresh basil leaves.
