- 1 sheet ready-rolled puff pastry
- 1 medium courgette, thinly sliced
- 150g goat’s cheese, crumbled
- 2 eggs
- 150ml double cream
- Salt and pepper to taste
Instructions

Preheat the oven to 200°C (180°C fan).

Roll out the puff pastry onto a baking sheet lined with parchment paper.

Arrange the courgette slices evenly over the pastry, leaving a small border around the edges.

Scatter the crumbled goat’s cheese over the courgette slices.

In a bowl, whisk together the eggs and cream until well combined. Season with salt and pepper.

Pour the egg mixture over the courgette and goat’s cheese.

Bake in the preheated oven for 30-35 minutes, or until the pastry is golden and the filling is set.
