Ingredients
- 1 ready-made pie crust
- 2 courgettes, thinly sliced
- 1 cup of grated cheddar cheese
- 1/2 cup of grated gruyere cheese
- 4 eggs
- 1 cup of milk
- 1/2 tsp of salt
- 1/4 tsp of black pepper
Instructions

Preheat the oven to 375°F (190°C).

Place the pie crust in a 9-inch (23 cm) pie dish and set aside.

In a medium skillet, heat some olive oil over medium heat. Add the sliced courgettes and sauté until they become tender, about 5 minutes.

In a bowl, whisk together the eggs, milk, salt, and black pepper.

Spread half of the sautéed courgettes onto the pie crust, followed by half of each grated cheese. Repeat the layers with the remaining courgettes and cheese.

Pour the egg mixture over the courgette and cheese layers.

Bake in the preheated oven for 40 minutes, or until the quiche is set and the top is golden brown.

Allow the quiche to cool for a few minutes before slicing and serving.
