How To Make Courgette & Caramelised Red Onion Puff Pastry Tart

Ingredients
- 1 sheet of puff pastry
- 2 medium courgettes, thinly sliced
- 1 large red onion, thinly sliced
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper, to taste
- 100g goat’s cheese, crumbled
- Fresh basil leaves, for garnish
Instructions

Preheat the oven to 200°C (180°C fan). Roll out the puff pastry sheet and place it on a baking tray lined with parchment paper.

In a frying pan, heat the olive oil over medium heat. Add the sliced red onions and cook until caramelised, about 10-15 minutes. Stir in the balsamic vinegar and season with salt and pepper.

Spread the caramelised onions evenly over the puff pastry, leaving a small border around the edges. Arrange the sliced courgettes on top of the onions.

Crumble the goat’s cheese over the courgettes. Season with salt and pepper.

Bake in the preheated oven for 15-20 minutes, or until the pastry is golden and the courgettes are tender.

Garnish with fresh basil leaves before serving.
