Ingredients
- 4 slices of bread
- 2 eggs
- 1/2 cup of coconut milk
- 1/4 cup of shredded coconut
- 1/4 tsp of cinnamon
- 1/4 tsp of nutmeg
- 1/4 tsp of vanilla extract
- 1/4 tsp of salt
- 2 tbsp of butter
- 1 ripe pineapple, peeled and sliced
- 1 tbsp of honey
- 1/4 tsp of chili powder
Instructions

Preheat the oven to 400°F (200°C).

In a shallow bowl, whisk together the eggs, coconut milk, shredded coconut, cinnamon, nutmeg, vanilla extract, and salt.

Dip each slice of bread into the egg mixture, allowing it to soak for a few seconds on each side.

Heat a tablespoon of butter in a skillet over medium heat. Cook the soaked bread slices for 2-3 minutes on each side until golden brown. Repeat with the remaining bread slices.

Place the pineapple slices on a baking sheet lined with parchment paper. Drizzle with honey and sprinkle with chili powder.

Roast the pineapple in the preheated oven for 10-15 minutes until slightly caramelized.

Serve the coconut french toast with the spiced roasted pineapple on top.

Optional: sprinkle with additional shredded coconut and drizzle with maple syrup.
