Ingredients
- 2 cups rolled oats
- 1/2 cup chopped almonds
- 1/4 cup honey
- 2 tablespoons melted coconut oil
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup dried cranberries
- 1/4 cup dried blueberries
- 1/4 cup chopped dark chocolate chunks
Instructions

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a large bowl, mix together the rolled oats, chopped almonds, honey, melted coconut oil, vanilla extract, and salt until well combined.

Spread the mixture evenly onto the prepared baking sheet and bake for 10 minutes.

Remove the baking sheet from the oven and give the granola a gentle stir. Return to the oven and bake for another 10 minutes until golden brown.

Remove from the oven and let cool completely on the baking sheet.

Once cooled, mix in the dried cranberries, dried blueberries, and chopped dark chocolate chunks.

Store the granola in an airtight container for up to 2 weeks.
