How To Make Chipotle Black Bean Soup with Lime-Pickled Onions

Ingredients
- 2 cans (15 oz each) black beans, rinsed and drained
- 1 tbsp olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 1 chipotle pepper in adobo sauce, minced
- 1 tsp ground cumin
- 1 tsp chili powder
- 4 cups vegetable broth
- 1 lime, juice and zest
- Salt and pepper to taste
- 1/2 cup diced tomatoes
- 1/4 cup chopped fresh cilantro
Instructions

In a large pot, heat olive oil over medium heat. Add the diced onion and minced garlic, and sauté until onions are translucent.

Add the chipotle pepper, cumin, and chili powder to the pot, and cook for another minute.

Add the black beans and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes.

While the soup is simmering, prepare the lime-pickled onions. In a small bowl, combine the lime juice and zest, salt, and diced tomatoes. Let it sit for at least 10 minutes.

Use an immersion blender or transfer half of the soup to a blender and puree until smooth. Return the pureed soup to the pot and stir well.

Season with salt and pepper to taste. Simmer for another 10 minutes to allow the flavors to meld together.

Serve the soup hot, garnished with lime-pickled onions and fresh cilantro.
