- 4 heads of chicory, halved
- 4 slices of bacon
- 2 tbsp olive oil
- 1 tsp fresh thyme leaves
- Salt and pepper to taste
Instructions

Preheat the oven to 400°F (200°C).

Place the halved chicory heads on a baking sheet and drizzle with olive oil. Season with salt, pepper, and thyme leaves.

Wrap each halved chicory head with a slice of bacon, securing it with a toothpick if necessary.

Roast in the preheated oven for 15-20 minutes or until the chicory is tender and the bacon is crispy.

Remove from the oven and let it cool for a few minutes before serving.
