How To Make Chickpea, Red Pepper, Egg & Feta Hash

Ingredients
- 2 cans of chickpeas, drained and rinsed
- 2 red peppers, diced
- 4 eggs
- 1/2 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Optional toppings: fresh herbs, hot sauce
Instructions

Heat olive oil in a large skillet over medium heat.

Add the diced red peppers and cook until they start to soften, about 5 minutes.

Add the chickpeas to the skillet and sprinkle with smoked paprika, salt, and pepper. Cook for another 5 minutes, stirring occasionally.

Make 4 wells in the chickpea mixture and crack an egg into each well. Season the eggs with salt and pepper.

Cover the skillet and cook for about 5 minutes, or until the eggs are cooked to your liking.

Sprinkle the feta cheese over the top of the hash.

Serve hot, garnished with fresh herbs and/or hot sauce if desired.
