Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/2 cup breadcrumbs
- 1/4 cup chopped red onion
- 2 cloves garlic, minced
- 1/4 cup chopped fresh cilantro
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- For the Carrot & Raisin Salad:
- 2 cups shredded carrots
- 1/2 cup raisins
- 1/4 cup chopped fresh parsley
- Juice of 1 lemon
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions

In a food processor, combine the chickpeas, breadcrumbs, red onion, garlic, cilantro, cumin, coriander, salt, and black pepper. Pulse until well combined but still slightly chunky.

Shape the mixture into patties, about 1/4 cup each.

Heat the olive oil in a large skillet over medium heat. Cook the patties for 4-5 minutes per side, until golden brown and crispy.

In a large bowl, combine the shredded carrots, raisins, parsley, lemon juice, olive oil, salt, and pepper. Toss well to combine.

Serve the chickpea patties with the carrot & raisin salad on the side.
