How To Make Chickpea Patties with Carrot & Raisin Salad

Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped red onion
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh cilantro
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • For the Carrot & Raisin Salad:
  • 2 cups shredded carrots
  • 1/2 cup raisins
  • 1/4 cup chopped fresh parsley
  • Juice of 1 lemon
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a food processor, combine the chickpeas, breadcrumbs, red onion, garlic, cilantro, cumin, coriander, salt, and black pepper. Pulse until well combined but still slightly chunky.

  2. Shape the mixture into patties, about 1/4 cup each.

  3. Heat the olive oil in a large skillet over medium heat. Cook the patties for 4-5 minutes per side, until golden brown and crispy.

  4. In a large bowl, combine the shredded carrots, raisins, parsley, lemon juice, olive oil, salt, and pepper. Toss well to combine.

  5. Serve the chickpea patties with the carrot & raisin salad on the side.
