How To Make Cauliflower Cheese & Spinach Pasta Bakes

Ingredients
- 8 oz pasta
- 2 cups cauliflower florets
- 2 cups fresh spinach
- 2 tbsp unsalted butter
- 2 tbsp all-purpose flour
- 2 cups milk
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
Instructions

Preheat the oven to 375°F (190°C). Cook the pasta according to package instructions and set aside.

Steam the cauliflower florets until tender, about 5 minutes. Remove from heat and set aside.

In a large skillet, melt the butter over medium heat. Add the flour and whisk until smooth and bubbly.

Gradually whisk in the milk, then bring to a simmer. Cook until the sauce has thickened, about 5 minutes.

Remove the skillet from heat and stir in the cheddar cheese, Parmesan cheese, garlic powder, onion powder, salt, and pepper until smooth.

Add the cooked pasta, cauliflower, and spinach into the skillet. Stir until everything is well coated in the cheese sauce.

Transfer the mixture into a greased baking dish. Sprinkle some extra shredded cheddar cheese on top if desired.

Bake in the preheated oven for 20-25 minutes, or until golden and bubbly.

Remove from the oven and let it cool for a few minutes before serving.
