Ingredients

  • 1 small head of cauliflower, grated
  • 1/2 cup bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 2 green onions, chopped
  • 1/4 cup chopped fresh parsley
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 eggs, beaten
  • 1/4 cup olive oil
  • For the Green Yogurt Sauce:
  • 1 cup plain Greek yogurt
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped fresh cilantro
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

  2. In a large bowl, combine the grated cauliflower, bread crumbs, Parmesan cheese, green onions, parsley, garlic powder, onion powder, salt, pepper, and beaten eggs. Mix well until the ingredients are evenly combined.

  3. Using your hands, shape the mixture into small patties, about 2-3 inches in diameter.

  4. Heat the olive oil in a large skillet over medium heat. Working in batches, cook the cauliflower cakes for about 3-4 minutes per side, or until they are golden brown.

  5. Transfer the cooked cauliflower cakes to the prepared baking sheet. Bake for an additional 10-12 minutes, or until they are cooked through and crispy.

  6. While the cauliflower cakes are baking, prepare the green yogurt sauce. In a small bowl, combine the Greek yogurt, chopped mint, chopped cilantro, lemon juice, salt, and pepper. Stir well to combine.

  7. Serve the cauliflower cakes hot with the green yogurt sauce on the side.
