Ingredients
- 1 head of cauliflower, cut into florets
- 1 large onion, sliced
- 2 cloves of garlic, minced
- 2 cups vegetable broth
- 1 cup heavy cream
- Salt and pepper, to taste
- Chopped fresh parsley, for garnish
Instructions

In a large pot, heat some oil over medium heat. Add the onion and garlic and cook until softened.

Add the cauliflower, vegetable broth, salt, and pepper. Bring to a boil, then reduce heat to low and simmer for 20 minutes until the cauliflower is tender.

Use an immersion blender or transfer the mixture to a blender and blend until smooth.

Return the mixture to the pot and stir in the heavy cream. Cook for an additional 5 minutes, until heated through.

Serve the cauliflower and onion cream hot, garnished with chopped fresh parsley.
