Ingredients
- 1 butternut squash, peeled, seeded, and cut into cubes
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup vegetable broth
- 1/2 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
Instructions

Preheat the oven to 375°F (190°C).

In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.

Add the butternut squash cubes, dried thyme, salt, and black pepper to the skillet. Cook for 5 minutes, stirring occasionally.

Pour the vegetable broth into the skillet and bring to a simmer. Cook until the squash is tender, about 10 minutes.

Transfer the mixture to a greased casserole dish. Sprinkle the grated Parmesan cheese and breadcrumbs evenly over the top.

Bake in the preheated oven for 25-30 minutes, or until the casserole is golden and bubbly.
