How To Make Butternut Squash & Sage Macaroni Cheese

Ingredients
- 8 oz macaroni
- 2 cups butternut squash, diced
- 2 tbsp olive oil
- 4 tbsp butter
- 1/4 cup all-purpose flour
- 2 cups milk
- 2 cups shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 tbsp fresh sage, chopped
- Salt and pepper to taste
Instructions

Preheat the oven to 375°F and cook the macaroni according to package instructions. Drain and set aside.

Toss the diced butternut squash with olive oil, salt, and pepper. Roast in the oven for 20 minutes, or until tender.

In a large saucepan, melt the butter over medium heat. Stir in the flour to make a roux.

Gradually whisk in the milk, stirring constantly until thickened. Remove from heat.

Stir in the cheddar cheese and grated Parmesan until melted and smooth. Season with salt and pepper.

Add the cooked macaroni, roasted butternut squash, and chopped sage to the cheese sauce. Stir until well combined.

Transfer the mixture to a greased baking dish and sprinkle with additional grated Parmesan and sage.

Bake in the preheated oven for 20 minutes, or until golden and bubbly.
