How To Make Broad Bean, Pea & Orzo Salad

Ingredients
- 1 cup orzo
- 1 cup broad beans, shelled
- 1 cup peas, fresh or frozen
- 1/4 cup red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 2 tbsp fresh mint leaves, chopped
- 2 tbsp fresh lemon juice
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions

Cook the orzo according to package instructions. Drain and set aside to cool.

In a pot of boiling water, blanch the broad beans for 2 minutes. Drain and transfer to a bowl of ice water to cool. Once cooled, remove the outer skins.

In the same pot, blanch the peas for 1-2 minutes. Drain and transfer to the bowl of ice water to cool.

In a large mixing bowl, combine the cooked orzo, broad beans, peas, red onion, feta cheese, and mint leaves.

In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour the dressing over the salad and toss to combine.

Serve the salad chilled or at room temperature.
