- 4 leeks, sliced
- 2 cups frozen peas
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cup vegetable broth
- 1 tablespoon butter
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions

In a large skillet, heat the olive oil over medium heat. Add the leeks and garlic, and cook until softened, about 5 minutes.

Stir in the frozen peas and vegetable broth. Bring to a simmer and cook for 10 minutes, until the peas are tender.

Stir in the butter and season with salt and pepper.

Garnish with fresh parsley before serving.
