Ingredients
- 1 sheet of ready-made shortcrust pastry
- 100g blackcurrant jam
- 100g butter, softened
- 100g caster sugar
- 2 eggs
- 1 tsp almond extract
- 100g ground almonds
- 25g plain flour
- 25g flaked almonds
Instructions

Preheat the oven to 180°C (350°F) and grease a tart tin.

Roll out the pastry and line the tart tin with it, trimming off any excess.

Spread the blackcurrant jam evenly over the pastry base.

In a mixing bowl, cream together the butter and sugar until light and fluffy.

Beat in the eggs one at a time, followed by the almond extract.

Fold in the ground almonds and flour until well combined.

Pour the almond mixture over the blackcurrant jam and smooth the top with a spatula.

Sprinkle the flaked almonds over the top.

Bake for 40 minutes or until the tart is golden brown and firm to the touch.
