Ingredients
- 2 cans of black beans, rinsed and drained
- 8 large eggs
- 1 tsp of salt
- 1 tsp of cumin
- 1 tsp of paprika
- 1/2 tsp of chili powder
- 1/2 tsp of garlic powder
- 1/4 tsp of black pepper
- 1 avocado, sliced
- 1/2 cup of cherry tomatoes, halved
- 1/4 cup of chopped cilantro
- hot sauce, for serving
Instructions

In a large skillet, heat 1 tbsp of oil over medium heat. Add the black beans, salt, cumin, paprika, chili powder, garlic powder, and black pepper. Cook for 5-7 minutes, until heated through.

In another skillet, heat 1 tbsp of oil over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 3-4 minutes.

Divide the black beans between 4 bowls. Top each bowl with 2 eggs, sliced avocado, cherry tomatoes, and chopped cilantro.

Serve with hot sauce on the side.
