Ingredients
- 4 slices of bread
- 1 cup canned chickpeas, drained
- 1 small beetroot, cooked and peeled
- 2 cloves of garlic
- 2 tablespoons tahini
- 2 tablespoons lemon juice
- 1/4 teaspoon cumin
- Salt and pepper, to taste
- 1/4 cup pitted Kalamata olives, sliced
- Fresh mint leaves, for garnish
Instructions

Toast the bread slices until they are golden and crispy.

In a food processor, combine the chickpeas, beetroot, garlic, tahini, lemon juice, cumin, salt, and pepper. Blend until smooth and creamy.

Spread a generous amount of beetroot hummus on each toast.

Top the toasts with sliced olives and garnish with fresh mint leaves.
