How To Make Beer-Braised Lentils

Ingredients
- 1 cup of green lentils
- 1 onion, diced
- 2 garlic cloves, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 bottle of beer (preferably dark or amber)
- 2 cups of vegetable broth
- 2 tablespoons of tomato paste
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions

Rinse the lentils under cold water and set aside.

In a large pot, heat some olive oil over medium heat and sauté the onion and garlic until fragrant.

Add the carrots and celery, and cook for another 3-4 minutes.

Pour in the beer, vegetable broth, tomato paste, and bay leaf. Stir to combine.

Add the lentils and season with salt and pepper.

Bring the mixture to a boil, then reduce heat to low and simmer for about 25 minutes or until the lentils are tender.

Remove the bay leaf and adjust the seasoning if needed.

Serve the beer-braised lentils hot, garnished with fresh parsley.
