How To Make Baked Tomato & Mozzarella Orzo

Ingredients
- 8 oz orzo pasta
- 2 cups cherry tomatoes, halved
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup shredded mozzarella cheese
- Fresh basil leaves, for garnish
Instructions

Preheat the oven to 375°F (190°C).

Cook the orzo according to package instructions until al dente. Drain and set aside.

In a baking dish, combine the cherry tomatoes, garlic, olive oil, dried basil, dried oregano, salt, and black pepper. Mix well to coat the tomatoes.

Bake in the preheated oven for 15 minutes, or until the tomatoes are softened and slightly caramelized.

Remove the baking dish from the oven and add the cooked orzo. Stir to combine with the tomatoes.

Sprinkle the shredded mozzarella cheese over the top of the orzo and tomatoes.

Return the dish to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

Remove from the oven and let it cool slightly. Garnish with fresh basil leaves before serving.
