Ingredients
- 2 aubergines, sliced
- 2 bell peppers, sliced
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp honey
- Salt and pepper, to taste
- Fresh basil leaves, for garnish
Instructions

Preheat the grill to medium-high heat.

Brush the aubergine and pepper slices with olive oil and season with salt and pepper.

Grill the vegetables for about 5-7 minutes on each side, or until they are charred and softened.

In a small bowl, whisk together the balsamic vinegar, honey, salt, and pepper to make the dressing.

Place the grilled aubergine and peppers in a serving bowl and drizzle the dressing over them.

Toss gently to coat the vegetables with the dressing.

Garnish with fresh basil leaves.
