Ingredients

  • 8 large eggs
  • 1/4 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/2 cup diced canned artichoke hearts
  • 1/2 cup diced roasted red peppers
  • 1 tbsp olive oil

Instructions

  1. In a large bowl, whisk together the eggs, milk, salt, black pepper, Parmesan cheese, and parsley.

  2. Heat the olive oil in a non-stick skillet over medium heat.

  3. Pour the egg mixture into the skillet and cook for 2 minutes, or until the edges start to set.

  4. Sprinkle the diced artichoke hearts and roasted red peppers evenly over the omelette.

  5. Gently fold the omelette in half using a spatula and cook for an additional 2 minutes, or until the eggs are fully cooked and the filling is heated through.

  6. Serve the omelette hot, sliced into wedges.
