- 8 large eggs
- 1/4 cup milk
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1/2 cup diced canned artichoke hearts
- 1/2 cup diced roasted red peppers
- 1 tbsp olive oil
Instructions

In a large bowl, whisk together the eggs, milk, salt, black pepper, Parmesan cheese, and parsley.

Heat the olive oil in a non-stick skillet over medium heat.

Pour the egg mixture into the skillet and cook for 2 minutes, or until the edges start to set.

Sprinkle the diced artichoke hearts and roasted red peppers evenly over the omelette.
