How To Make Apricot & Almond Chelsea Buns

Ingredients
- 250g all-purpose flour
- 1 tsp baking powder
- 50g caster sugar
- 50g unsalted butter, cold and diced
- 150ml milk
- 100g dried apricots, chopped
- 50g almonds, chopped
- 2 tbsp apricot jam, for glazing
Instructions

Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.

In a large mixing bowl, combine the flour, baking powder, and sugar. Rub in the cold butter until the mixture resembles breadcrumbs.

Gradually add the milk and mix until it forms a soft dough.

On a lightly floured surface, knead the dough for about 5 minutes until smooth.

Roll out the dough into a rectangle about 20x30cm.

Spread the chopped dried apricots and almonds evenly over the dough.

Starting from one long edge, tightly roll the dough into a log shape.

Using a sharp knife, cut the log into 8 equal slices.

Place the slices on the prepared baking tray, cut side up, leaving a little space between each bun.

Bake in the preheated oven for 20-25 minutes, until golden brown.

While the buns are still warm, brush them with apricot jam to give them a shiny glaze.
