How To Make All-in-One Roast Bubble & Squeak

Who says vegetarians don’t get to enjoy savory meals? A taste of these authentic vegetarian recipes will make you change your mind. So, you just might want to go vegetarian after your first bite.

Serves:

Ingredients

  • 2 cups of leftover roast vegetables (such as carrots, Brussels sprouts, and parsnips)
  • 2 cups of mashed potatoes
  • 4 cooked sausages, sliced
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tbsp of olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).

  2. In a large skillet, heat olive oil over medium heat. Add onions and garlic, sauté until softened.

  3. Add roast vegetables and sliced sausages to the skillet. Cook for 5 minutes, stirring occasionally.

  4. Add mashed potatoes to the skillet and mix well, breaking up any lumps.

  5. Season with salt and pepper to taste. Cook for another 5 minutes until heated through.

  6. Transfer the mixture to a baking dish and press it down firmly with the back of a spoon.

  7. Bake in the preheated oven for 20 minutes or until the top is golden and crispy.

  8. Serve hot and enjoy!
