How To Make All-in-One Roast Bubble & Squeak

Ingredients
- 2 cups of leftover roast vegetables (such as carrots, Brussels sprouts, and parsnips)
- 2 cups of mashed potatoes
- 4 cooked sausages, sliced
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 tbsp of olive oil
- Salt and pepper, to taste
Instructions

Preheat your oven to 400°F (200°C).

In a large skillet, heat olive oil over medium heat. Add onions and garlic, sauté until softened.

Add roast vegetables and sliced sausages to the skillet. Cook for 5 minutes, stirring occasionally.

Add mashed potatoes to the skillet and mix well, breaking up any lumps.

Season with salt and pepper to taste. Cook for another 5 minutes until heated through.

Transfer the mixture to a baking dish and press it down firmly with the back of a spoon.

Bake in the preheated oven for 20 minutes or until the top is golden and crispy.
