- 2 medium-sized sweet potatoes, peeled and diced
- 2 medium-sized parsnips, peeled and diced
- 2 medium-sized carrots, peeled and diced
- 4 tablespoons unsalted butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1/4 teaspoon ground nutmeg

In a large skillet, melt the butter over medium heat. Cook until the butter turns golden brown and gives off a nutty aroma, about 3-4 minutes.

Add the sweet potatoes, parsnips, and carrots to the skillet. Stir to coat the vegetables evenly in the browned butter.

Sprinkle the salt, black pepper, dried thyme, and ground nutmeg over the vegetables. Stir well to combine.

Reduce the heat to medium-low and cover the skillet. Cook for 20-25 minutes, stirring occasionally, until the vegetables are tender.
