Preparation: 15 minutes
Cooking: 30 minutes
Total: 45 minutes

Serves:

Ingredients

  • 2 medium-sized sweet potatoes, peeled and diced
  • 2 medium-sized parsnips, peeled and diced
  • 2 medium-sized carrots, peeled and diced
  • 4 tablespoons unsalted butter
  • 1 teaspoon salt

  2. Add the sweet potatoes, parsnips, and carrots to the skillet. Stir to coat the vegetables evenly in the browned butter.

  4. Reduce the heat to medium-low and cover the skillet. Cook for 20-25 minutes, stirring occasionally, until the vegetables are tender.
